Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare the Dough: In a large bowl, whisk together the dry ingredients. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. In a separate bowl, combine the mashed sweet potato and buttermilk until smooth. Add the sweet potato mixture to the dry ingredients and gently stir until just combined, adjusting with more buttermilk if needed.
- Shape the Biscuits: Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick rectangle. Fold the dough in half and pat out again; repeat 2-3 times. Cut out biscuits using a round cutter and place them on the baking sheet.
- Bake: Bake for 12-15 minutes until golden brown.
