Description

These Sweet Potato Chocolate Chip Cookies are a delightful twist on the classic treat. The sweet potato adds a subtle sweetness and moistness, making these cookies soft and irresistible. Packed with chocolate chips, they are perfect for fall or anytime you crave a comforting, homemade dessert.

Ingredients

Scale

For the cookies:

  • 1/2 cup mashed cooked sweet potato (cooled)
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add wet ingredients: Add the egg, vanilla extract, and mashed sweet potato, mixing until smooth.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Add chocolate chips: Fold in the chocolate chips.
  6. Bake: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are lightly golden.
  7. Cool: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Make sure the sweet potato is fully cooled and mashed smoothly to avoid lumps in the dough.
  • You can add chopped pecans or walnuts for extra texture.
  • Store in an airtight container for up to 4 days.
