Description

Indulge in the delightful flavors of this Sweet Potato, Feta & Caramelised Onion Tart that combines the sweetness of caramelized onions, the creaminess of feta cheese, and the earthy sweetness of sweet potatoes on a flaky puff pastry base.

Puff Pastry:

  • 1 sheet puff pastry, thawed

Sweet Potato:

  • 2 medium sweet potatoes, peeled and thinly sliced

Caramelised Onions:

  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1 tablespoon butter
  • 1 teaspoon brown sugar
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 4 ounces feta cheese, crumbled
  • 1 egg, beaten (for brushing)
  • Fresh thyme or arugula for garnish

Instructions

  1. Preheat and Prepare: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Caramelize Onions: In a skillet, warm olive oil and butter, add onions, cook until golden, then add sugar, vinegar, thyme, salt, and pepper.
  3. Prepare Sweet Potatoes: Steam or roast sweet potato slices until tender.
  4. Assemble Tart: Roll out puff pastry, add caramelized onions, sweet potato slices, and feta. Brush edges with egg.
  5. Bake: Bake for 25–30 minutes until golden. Garnish with thyme or arugula before serving.

Notes

  • For extra richness, drizzle with honey before serving.
  • You can also swap the feta for goat cheese.
