Puff Pastry:
- 1 sheet puff pastry, thawed
Sweet Potato:
- 2 medium sweet potatoes, peeled and thinly sliced
Caramelised Onions:
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 tablespoon butter
- 1 teaspoon brown sugar
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 4 ounces feta cheese, crumbled
- 1 egg, beaten (for brushing)
- Fresh thyme or arugula for garnish
Instructions
- Preheat and Prepare: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Caramelize Onions: In a skillet, warm olive oil and butter, add onions, cook until golden, then add sugar, vinegar, thyme, salt, and pepper.
- Prepare Sweet Potatoes: Steam or roast sweet potato slices until tender.
- Assemble Tart: Roll out puff pastry, add caramelized onions, sweet potato slices, and feta. Brush edges with egg.
- Bake: Bake for 25–30 minutes until golden. Garnish with thyme or arugula before serving.
Notes
- For extra richness, drizzle with honey before serving.
- You can also swap the feta for goat cheese.
