Sweet Potato Fritters:

  • 2 medium sweet potatoes, peeled and grated
  • 1/4 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 3 green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Dill Yogurt Sauce:

  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Squeeze Sweet Potatoes: Place the grated sweet potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
  2. Mix Ingredients: Transfer to a large bowl and add flour, eggs, green onions, garlic powder, smoked paprika, salt, and black pepper. Mix until well combined.
  3. Fry Fritters: Heat olive oil in a large skillet over medium heat. Scoop about 1/4 cup of the mixture for each fritter, flatten slightly in the pan, and cook for 3–4 minutes per side until golden brown.
  4. Prepare Sauce: For the dill yogurt sauce, combine Greek yogurt, fresh dill, lemon juice, minced garlic, salt, and pepper in a bowl. Mix well.
  5. Serve: Serve fritters warm with the dill yogurt sauce on the side or drizzled over the top.

Notes
