Sweet Potato Fritters:
- 2 medium sweet potatoes, peeled and grated
- 1/4 cup all-purpose flour
- 2 large eggs, lightly beaten
- 3 green onions, thinly sliced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Dill Yogurt Sauce:
- 1 cup plain Greek yogurt
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Squeeze Sweet Potatoes: Place the grated sweet potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
- Mix Ingredients: Transfer to a large bowl and add flour, eggs, green onions, garlic powder, smoked paprika, salt, and black pepper. Mix until well combined.
- Fry Fritters: Heat olive oil in a large skillet over medium heat. Scoop about 1/4 cup of the mixture for each fritter, flatten slightly in the pan, and cook for 3–4 minutes per side until golden brown.
- Prepare Sauce: For the dill yogurt sauce, combine Greek yogurt, fresh dill, lemon juice, minced garlic, salt, and pepper in a bowl. Mix well.
- Serve: Serve fritters warm with the dill yogurt sauce on the side or drizzled over the top.
Notes
- Add a pinch of cayenne pepper for extra heat.
- These fritters can also be made ahead and reheated in the oven.
