Instructions

  3. Cut Pie Crusts: Unroll the refrigerated pie crusts on a lightly floured surface. Using a 4-inch round cutter, cut out circles from the dough. Re-roll scraps as needed to make approximately 10 rounds.
  4. Assemble Pies: Spoon about 1 tablespoon of the sweet potato filling onto the center of half the dough rounds. Top each filled round with another dough circle. Press edges together firmly with a fork to seal the pies completely and prevent filling from leaking.
