Filling:
- 1½ cups mashed cooked sweet potato (about 2 medium sweet potatoes)
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg

- 1 teaspoon vanilla extract
- 1 large egg (for filling)
Crust:
- 2 refrigerated pie crusts (or homemade)
- 1 egg beaten with 1 tablespoon water (for egg wash)
- coarse sugar or cinnamon sugar for topping (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare Filling: Combine mashed sweet potato, brown sugar, cinnamon, nutmeg, salt, vanilla, and egg until smooth.
- Prepare Crust: Roll out pie crusts, cut into rounds, place filling, seal, brush with egg wash, and sprinkle with sugar.
- Bake: Bake for 18-22 minutes until golden brown. Cool before serving.

- You can make the filling a day ahead and refrigerate.
- Add chopped pecans or mini marshmallows for a fun twist.
