Description

Filling:

  • 1½ cups mashed cooked sweet potato (about 2 medium sweet potatoes)
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

  • 1 teaspoon vanilla extract
  • 1 large egg (for filling)

Crust:

  • 2 refrigerated pie crusts (or homemade)
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • coarse sugar or cinnamon sugar for topping (optional)

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare Filling: Combine mashed sweet potato, brown sugar, cinnamon, nutmeg, salt, vanilla, and egg until smooth.
  3. Prepare Crust: Roll out pie crusts, cut into rounds, place filling, seal, brush with egg wash, and sprinkle with sugar.
  4. Bake: Bake for 18-22 minutes until golden brown. Cool before serving.
