This Sweet Potato Mash with Chipotle and Lime is a flavorful twist on traditional mashed sweet potatoes. Sweet Potato Mash:

  • 2 pounds sweet potatoes, peeled and cut into chunks
  • 2 tablespoons unsalted butter

Chipotle Lime Seasoning:

  • 1 to 2 chipotle peppers in adobo sauce, minced
  • 1 tablespoon adobo sauce from the chipotle can
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Garnish:

  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Boil Sweet Potatoes: Place sweet potato chunks in a large pot, cover with cold water, bring to a boil, then simmer until tender, about 15-20 minutes.
  2. Mash: Drain well, return sweet potatoes to the pot, add butter, chipotle peppers, adobo sauce, lime juice, lime zest, cumin, salt, and pepper. Mash until smooth and creamy.
  3. Adjust Seasoning: Taste and adjust seasoning as needed.
  4. Serve: Transfer to a serving bowl, garnish with cilantro, and serve hot.
