Sweet Potato Mash:
- 2 pounds sweet potatoes, peeled and cut into chunks
- 2 tablespoons unsalted butter
Chipotle Lime Seasoning:
- 1 to 2 chipotle peppers in adobo sauce, minced
- 1 tablespoon adobo sauce from the chipotle can
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Garnish:
- Chopped fresh cilantro for garnish (optional)
Instructions
- Boil Sweet Potatoes: Place sweet potato chunks in a large pot, cover with cold water, bring to a boil, then simmer until tender, about 15-20 minutes.
- Mash: Drain well, return sweet potatoes to the pot, add butter, chipotle peppers, adobo sauce, lime juice, lime zest, cumin, salt, and pepper. Mash until smooth and creamy.
- Adjust Seasoning: Taste and adjust seasoning as needed.
- Serve: Transfer to a serving bowl, garnish with cilantro, and serve hot.
