Main Ingredients:

  • 1 large head cauliflower (cut into bite-sized florets)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Glaze:

  • 1/2 cup honey or maple syrup
  • 2 tablespoons sriracha or other hot sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 garlic cloves (minced)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Garnish (optional):

  • sesame seeds and chopped green onions

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower: In a large bowl, toss cauliflower with olive oil, salt, and pepper. Spread on the baking sheet.
  3. Roast cauliflower: Roast for 25–30 minutes, flipping halfway through, until golden and crisp.
  4. Make glaze: In a saucepan, combine honey (or maple syrup), sriracha, soy sauce, rice vinegar, and garlic. Simmer for 3–4 minutes.
  5. Thicken glaze (optional): Add cornstarch slurry for a thicker sauce, cook for 1–2 minutes.
  6. Coat cauliflower: Transfer roasted cauliflower to a bowl, pour the glaze over, toss to coat evenly.
  7. Finish in oven: Return to the oven for 5 minutes to caramelize the glaze slightly.
  8. Garnish and serve: Garnish with sesame seeds and green onions if desired. Serve hot.
