For Filling and Topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup cherry pie filling (plus extra for garnish)
  • 1/2 cup semi-sweet chocolate chips (melted for drizzle)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and grease it. Sift together dry ingredients.
  2. Mix Wet Ingredients: Beat eggs and sugar until thick. Add vanilla and milk. Gently fold in dry ingredients. Bake.
  3. Roll the Cake: Dust a towel with powdered sugar. Roll the baked cake in the towel and let it cool.
  4. Prepare Filling: Whip cream with sugar and vanilla. Unroll the cake, spread cream, add cherry filling, roll back up.
  5. Chill and Serve: Drizzle with melted chocolate, garnish, chill for at least 1 hour before slicing and serving.
