This Taco Casserole is a delicious and easy meal that the whole family will love. Layers of seasoned ground beef, beans, corn, and cheese baked to perfection, topped with your favorite taco toppings.

Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/4 cup water
Additional Layers:
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup frozen corn
- 1 cup salsa
- 2 cups crushed tortilla chips
- 2 cups shredded cheddar cheese
Optional Toppings:
- sour cream
- chopped cilantro
- sliced green onions
- diced avocado
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Cook the beef: In a skillet, cook the ground beef until browned. Add onion and garlic, cook until soft. Stir in taco seasoning and water, simmer for 2-3 minutes.
- Add ingredients: Add black beans, tomatoes, corn, and salsa. Heat through.
- Layer the casserole: In a baking dish, layer half of tortilla chips, beef mixture, and half of the cheese. Repeat layers.
- Bake: Bake for 20 minutes until cheese is melted. Let cool slightly before serving. Top with desired toppings.
Notes
- You can substitute ground turkey or chicken for the beef.
- For a spicier version, add chopped jalapeños or use hot salsa.
