Ingredients
Scale
Meat and Seasoning
- 1 lb lean ground beef
- 1 (1-oz) package taco seasoning
- 1 (10-oz) can Rotel diced tomatoes and green chiles, undrained
Cheeses
- 8 oz Velveeta cheese, cut into small cubes or shredded
- 1 cup shredded muenster cheese
- 1 (16-oz) container sour cream
Instructions
- Preheat Oven: Preheat your oven to 350ºF and lightly spray a 9×9-inch baking dish with cooking spray to prevent sticking.
- Cook Ground Beef: In a large skillet over medium heat, cook the lean ground beef until it is no longer pink. Drain off the excess fat to keep the dish from being greasy. Add the taco seasoning and the undrained can of Rotel diced tomatoes and green chiles, stirring to combine. Continue cooking for 2 to 3 minutes until most of the liquid has been absorbed by the meat.
- Mix Ingredients: Transfer the seasoned taco meat mixture into a large bowl. Add the cubed or shredded Velveeta cheese, shredded muenster cheese, and the entire container of sour cream. Mix all ingredients thoroughly until well combined.
- Bake the Dip: Pour the mixture into the prepared baking dish. Cover the dish with foil and bake in the preheated oven for 30 to 40 minutes or until the dip is heated through and bubbling at the edges.
- Serve: Remove from the oven and serve warm with tortilla chips, corn chips, or fresh celery sticks for dipping.
Notes
- You can substitute Velveeta with a combination of cream cheese and cheddar cheese for a less processed option.
- If you prefer a spicier dip, add a few dashes of hot sauce or extra diced jalapeños.
- For a lower-fat version, choose reduced-fat cheese and sour cream.
- This dip can also be prepared a day ahead and baked just before serving.
- Serve immediately after baking for the best texture and flavor.
