Main Ingredients:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup tomato sauce
- 3 cups beef broth
- 12 oz short pasta (like penne or rotini)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup black beans, drained and rinsed
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup sour cream
- salt and black pepper to taste
Garnish:
- fresh cilantro
- sliced jalapeños (optional)
Instructions
- Cook the Beef: In a large pot or deep skillet, cook ground beef and onion over medium heat until beef is browned and onion is softened. Drain excess fat if needed.
- Add Seasonings: Stir in garlic and taco seasoning, cooking for 1 minute.
- Cook Pasta: Add diced tomatoes with green chilies, tomato sauce, beef broth, and pasta. Bring to a boil, then reduce heat to a simmer. Cover and cook for 12 to 15 minutes, stirring occasionally, until pasta is tender.
- Finish the Dish: Stir in corn, black beans, and 1 cup cheddar cheese until melted and creamy. Remove from heat and stir in sour cream. Adjust seasoning with salt and pepper.
- Serve: Sprinkle with remaining cheese, garnish with cilantro and jalapeños if desired, and serve hot.
Notes
- For a lighter version, use ground turkey or chicken instead of beef.
- You can also top with crushed tortilla chips for extra crunch.
