Description

This delicious Taco Pasta recipe combines the flavors of tacos with the ease of a one-pot pasta dish. It’s a hearty and satisfying meal that the whole family will love, ready in just 30 minutes!

Main Ingredients:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup tomato sauce
  • 3 cups beef broth
  • 12 oz short pasta (like penne or rotini)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup sour cream
  • salt and black pepper to taste

Garnish:

  • fresh cilantro
  • sliced jalapeños (optional)

Instructions

  1. Cook the Beef: In a large pot or deep skillet, cook ground beef and onion over medium heat until beef is browned and onion is softened. Drain excess fat if needed.
  2. Add Seasonings: Stir in garlic and taco seasoning, cooking for 1 minute.
  3. Cook Pasta: Add diced tomatoes with green chilies, tomato sauce, beef broth, and pasta. Bring to a boil, then reduce heat to a simmer. Cover and cook for 12 to 15 minutes, stirring occasionally, until pasta is tender.
  4. Finish the Dish: Stir in corn, black beans, and 1 cup cheddar cheese until melted and creamy. Remove from heat and stir in sour cream. Adjust seasoning with salt and pepper.
  5. Serve: Sprinkle with remaining cheese, garnish with cilantro and jalapeños if desired, and serve hot.

Notes

  • For a lighter version, use ground turkey or chicken instead of beef.
  • You can also top with crushed tortilla chips for extra crunch.
