  • 12 ounces pasta (such as rotini or shells)
  • 1 pound ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 1 (10-ounce) can diced tomatoes with green chiles (undrained)
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tablespoon olive oil

Garnish:

  • Chopped cilantro and sliced green onions

Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté Beef and Onion: In a large skillet, heat olive oil over medium heat. Add the ground beef and onion, cook until beef is browned and onion is softened.
