- 12 ounces pasta (such as rotini or shells)
- 1 pound ground beef
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/2 cup water
- 1 (10-ounce) can diced tomatoes with green chiles (undrained)
- 1 cup corn (frozen or canned)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon olive oil
Garnish:
- Chopped cilantro and sliced green onions
Instructions
- Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.
- Sauté Beef and Onion: In a large skillet, heat olive oil over medium heat. Add the ground beef and onion, cook until beef is browned and onion is softened.
- Add Seasonings: Add garlic, taco seasoning, water, diced tomatoes, and corn. Simmer for a few minutes.
