Description
This quick and easy Taco Rice recipe combines seasoned ground beef with tender rice, salsa, and melted cheddar cheese for a flavorful one-pan meal perfect for busy weeknights.
Ingredients
Scale
Meat and Seasoning
- 1 pound ground beef
- 1 packet taco seasoning
Liquids & Grains
- 2 cups water
- 2 cups Minute Rice, uncooked
Additional Ingredients
- 1 cup salsa
- 1 cup shredded cheddar cheese
Instructions
- Brown the Beef: In a large skillet, brown and crumble the ground beef over medium heat until fully cooked. Drain excess grease to keep the dish from being too oily.
- Add Seasoning and Water: Stir in the taco seasoning packet and 2 cups of water with the browned beef. Bring the mixture to a boil, allowing the flavors to blend.
- Cook the Rice: Reduce the heat to low, add the uncooked Minute Rice, and stir well to combine. Cover the skillet with a lid and cook for about 5 minutes, or until the rice is tender and has absorbed most of the liquid.
- Finish with Salsa and Cheese: Remove the lid, then stir in the salsa and shredded cheddar cheese until the cheese is melted and everything is evenly mixed. Serve warm.
Notes
- You can substitute ground turkey or chicken for a leaner protein option.
- Adjust the amount of salsa based on your preferred level of spiciness.
- For extra veggies, consider adding diced bell peppers or corn during the beef cooking step.
- Use reduced-fat cheese if you want a lighter version.
