Potatoes:

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Taco Meat Filling:

  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning
  • 1/2 cup water

Toppings:

  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Bake Potatoes: Scrub and prick potatoes, rub with olive oil, sprinkle with salt, and bake for 45–60 minutes until tender.
  3. Cook Taco Meat: Brown ground beef, add taco seasoning and water, simmer until thickened.
  4. Prepare Potatoes: Cut a slit in each potato, fluff insides, season, fill with taco meat.
  5. Add Toppings: Top with cheese, sour cream, salsa, tomatoes, green onions, and cilantro.
