Dressing:

- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey

Optional:

Instructions
- Blanch the Asparagus: Cook asparagus in boiling salted water for 2–3 minutes, then transfer to ice water to cool.
- Make the Dressing: Whisk together olive oil, vinegar, mustard, honey, salt, and pepper.
- Combine Ingredients: Toss blanched asparagus, red onion, and tarragon in a bowl. Pour dressing over and mix.
- Finish and Serve: Add optional feta cheese and nuts. Serve chilled or at room temperature.
