Beef Tips:

  • 2 pounds beef stew meat or sirloin tips
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced

Gravy:

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 1 packet (1 oz) onion soup mix
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)

To Serve:

  • 12 ounces egg noodles, cooked
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Sear the Beef: In a large skillet, sear the beef tips in olive oil until lightly browned. Transfer to the slow cooker.
  2. Prepare the Gravy: Add onion, garlic, beef broth, Worcestershire sauce, soy sauce, thyme, black pepper, and onion soup mix to the slow cooker. Cook on low for 6–7 hours or high for 3–4 hours.
  3. Thicken the Sauce: In the last 30 minutes, stir in cornstarch slurry to thicken. Cook egg noodles separately.
  4. Serve: Serve beef tips and gravy over noodles. Garnish with parsley.
