  • 1 lb ground chicken
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 small onion, finely diced
  • 1 red bell pepper, finely diced
  • 1 carrot, grated

Sauce and Toppings:

  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha or chili paste
  • 2 teaspoons brown sugar
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped peanuts
  • 2 green onions, sliced
  • 12 large butter lettuce or Bibb lettuce leaves
  • Lime wedges for serving

Instructions

  1. Heat sesame oil: In a large skillet over medium-high heat, heat sesame oil.
  2. Cook ground chicken: Add ground chicken to the skillet and cook for 5–6 minutes, breaking it apart with a spoon until fully cooked.
  3. Add aromatics: Stir in garlic, ginger, and onion; sauté for 2 minutes until fragrant.
  4. Cook vegetables: Add bell pepper and carrot, cook for 3 minutes until softened.
  5. Make the sauce: Stir in hoisin sauce, soy sauce, fish sauce, rice vinegar, sriracha, and brown sugar. Simmer for 2–3 minutes until thickened.
  6. Finish and serve: Remove from heat, stir in cilantro, peanuts, and green onions. Spoon the chicken mixture into lettuce leaves, serve with lime wedges.

Notes

  • For extra crunch, top with shredded cabbage or bean sprouts.
  • Ground turkey or pork can be used instead of chicken.
  • To make it spicier, increase the sriracha or add sliced Thai chilis.
