- 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons red curry paste
- 4 cups chicken broth
- 1 can (14 ounces) coconut milk
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 cup mushrooms, sliced
- 1 red bell pepper, thinly sliced
- juice of 1 lime
- 1/4 cup fresh cilantro, chopped
- 2 green onions, sliced
- fresh Thai basil for garnish (optional)

- Heat the Aromatics: Heat vegetable oil in a pot, sauté onion, garlic, and ginger until fragrant.
- Stir in Curry Paste: Add red curry paste, cook for 1 minute.

- Add Broth and Coconut Milk: Pour in broth and coconut milk, add fish sauce, sugar, mushrooms, and bell pepper.
- Simmer: Bring to a simmer, cook for 15 minutes.
- Finish: Stir in lime juice, half of cilantro, then serve hot garnished with green onions, remaining cilantro, and Thai basil.
