Description

This Thai Red Curry Dumpling Soup is a comforting and flavorful dish that combines spicy red curry broth with tender dumplings and fresh vegetables. Perfect for a cozy meal, it balances rich coconut milk, aromatic spices, and a hint of lime for freshness.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons Thai red curry paste
  • 4 cups chicken or vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon fish sauce (or soy sauce for vegetarian)
  • 1 teaspoon brown sugar
  • 1 cup sliced mushrooms
  • 1 red bell pepper, thinly sliced
  • 1 cup baby spinach
  • 1 pack frozen dumplings (about 12–16, any variety)
  • Juice of 1 lime
  • Chopped fresh cilantro and green onions for garnish

Instructions

  1. Prepare the base: Heat vegetable oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 3 minutes.
  2. Add aromatics: Stir in minced garlic and grated ginger and cook for another minute to release their fragrance.
  3. Incorporate curry paste: Add the Thai red curry paste and cook for 1–2 minutes until it’s fragrant and well blended with the aromatics.
  4. Add liquids and seasonings: Pour in the chicken or vegetable broth along with the coconut milk. Stir in fish sauce (or soy sauce for vegetarian) and brown sugar, then bring the mixture to a gentle simmer.
  5. Cook vegetables: Add the sliced mushrooms and red bell pepper to the pot and let simmer for 5–7 minutes until the vegetables are tender.
  6. Cook dumplings: Carefully add the frozen dumplings to the simmering soup and cook for 6–8 minutes, or until they are fully cooked through.
  7. Finish with greens and lime: Stir in the baby spinach and the juice of one lime, allowing the spinach to wilt in the hot soup.
  8. Adjust seasoning and serve: Taste the soup and adjust seasonings as needed. Serve hot, garnished with chopped cilantro and green onions for extra freshness and flavor.

Notes

  • Use any type of dumplings—pork, chicken, or vegetarian options work well.
  • Add a dash of chili oil if you desire extra heat in your soup.
  • For a vegan version, swap fish sauce with soy sauce and use plant-based dumplings.
