For the Chicken:

  • 1.5–2 pounds boneless, skinless chicken thighs or breasts

For the Sauce:

  • 1 can (13.5 oz) full-fat coconut milk
  • 1/3 cup natural peanut butter
  • 2 tablespoons red curry paste
  • 2 tablespoons low-sodium soy sauce or tamari
  • 1 tablespoon honey or brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon lime juice

Additional:

  • 1 red bell pepper, sliced
  • 1/2 cup chopped fresh cilantro (for garnish)
  • Chopped peanuts and lime wedges for serving (optional)

Instructions

  1. Prepare the Chicken: Place the chicken in the slow cooker.
  2. Make the Sauce: Whisk together coconut milk, peanut butter, red curry paste, soy sauce, honey, garlic, ginger, and lime juice. Pour over the chicken.
  3. Cook: Add sliced bell pepper, cover, and cook on low for 5–6 hours or high for 2.5–3 hours until chicken is tender.
  4. Shred and Serve: Shred the chicken, mix with the sauce, and serve over rice or noodles. Garnish with cilantro, peanuts, and lime wedges.

Notes

  • Adjust spice level with more or less curry paste.
  • Chicken thighs are flavorful, but breasts work too.
  • Leftovers keep well in the fridge for up to 4 days.
