Soup Base:
- 1 tablespoon coconut oil or neutral oil
- 1 small onion, thinly sliced
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon red curry paste
- 3 cups fish or chicken broth
- 1 (14-ounce) can coconut milk
- 1 tablespoon fish sauce
- 1 teaspoon brown sugar
- zest and juice of 1 lime
Additional Ingredients:
- 1 pound white fish fillets (like cod or halibut), cut into chunks
- 1 cup mushrooms, sliced
- 1 red bell pepper, thinly sliced
- 1 cup baby spinach or bok choy
- fresh cilantro and lime wedges for garnish
Instructions
- Sauté Aromatics: Heat coconut oil in a large pot over medium heat. Add onion and sauté until soft. Stir in garlic, ginger, and red curry paste; cook until fragrant.
- Simmer Base: Pour in the broth and bring to a simmer. Stir in coconut milk, fish sauce, brown sugar, lime zest, and lime juice.
- Add Ingredients: Add mushrooms and red bell pepper, simmer for 5 minutes. Gently add fish, cook until done. Stir in spinach before serving.
- Serve: Ladle into bowls, garnish with cilantro and lime wedges.
Notes
- You can substitute shrimp or tofu for the fish.
- For a spicier version, add sliced chili peppers or more curry paste.
