Ground Chicken Mixture:

  • 1 pound ground chicken
  • 1 tablespoon vegetable oil
  • 2 garlic cloves, minced
  • 1 small shallot, finely diced
  • 1 red chili, finely sliced (optional)
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1/4 cup chicken broth

Garnish:

  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 2 green onions, sliced
  • 1/4 cup roasted peanuts, chopped
  • 8 large butter lettuce leaves

Instructions

  1. Prepare Ground Chicken: Heat vegetable oil in a skillet, sauté garlic and shallot, add ground chicken, cook until done.
  2. Add Flavors: Stir in red chili, fish sauce, soy sauce, lime juice, sugar, and chicken broth. Simmer until slightly reduced.
  3. Finish and Serve: Remove from heat, mix in cilantro, mint, and green onions. Spoon mixture into lettuce leaves, top with peanuts, and serve.
