Description

This Detox Crockpot Lentil Soup is a comforting and nourishing dish packed with healthy ingredients. It’s easy to make in a slow cooker and perfect for a cozy meal.


Ingredients

Lentil Soup:

  • 1½ cups dried brown or green lentils (rinsed)
  • 3 carrots (peeled and chopped)
  • 2 celery stalks (chopped)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 (15 oz) can diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • ½ tsp paprika
  • ½ tsp dried thyme
  • 1 bay leaf
  • 1½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 2 cups chopped kale or spinach
  • juice of 1 lemon

Instructions

  1. Add ingredients to crockpot: Combine lentils, carrots, celery, onion, garlic, tomatoes, broth, cumin, turmeric, paprika, thyme, bay leaf, salt, pepper, and olive oil in a crockpot.
  2. Cook: Cover and cook on low for 7–8 hours or on high for 4–5 hours until lentils and vegetables are tender.
  3. Add greens and lemon juice: Remove bay leaf, stir in kale/spinach and lemon juice, then let sit for 5–10 minutes until greens are wilted.
  4. Adjust seasoning and serve: Adjust seasoning to taste and serve hot.

Notes

  • This soup freezes well once cooled.
  • Enhance with cayenne or red pepper flakes for heat, or top with fresh herbs.
