This Detox Crockpot Lentil Soup is a comforting and nourishing dish packed with healthy ingredients. It’s easy to make in a slow cooker and perfect for a cozy meal.

Lentil Soup:
- 1½ cups dried brown or green lentils (rinsed)
- 3 carrots (peeled and chopped)
- 2 celery stalks (chopped)
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 1 (15 oz) can diced tomatoes
- 6 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp turmeric
- ½ tsp paprika
- ½ tsp dried thyme
- 1 bay leaf
- 1½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- 2 cups chopped kale or spinach
- juice of 1 lemon
Instructions
- Add ingredients to crockpot: Combine lentils, carrots, celery, onion, garlic, tomatoes, broth, cumin, turmeric, paprika, thyme, bay leaf, salt, pepper, and olive oil in a crockpot.
- Cook: Cover and cook on low for 7–8 hours or on high for 4–5 hours until lentils and vegetables are tender.
- Add greens and lemon juice: Remove bay leaf, stir in kale/spinach and lemon juice, then let sit for 5–10 minutes until greens are wilted.
- Adjust seasoning and serve: Adjust seasoning to taste and serve hot.
Notes
- This soup freezes well once cooled.
- Enhance with cayenne or red pepper flakes for heat, or top with fresh herbs.
