These Grilled Chicken Tacos are a perfect balance of flavors – juicy grilled chicken with zesty lime and warm spices, topped with fresh veggies and cheese, all wrapped in a warm tortilla. An easy and delicious meal for any day of the week!

For the Chicken:
- 1.5 pounds boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- juice of 2 limes
- 2 cloves garlic (minced)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For Serving:
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup crumbled cotija or shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- lime wedges (for serving)
Instructions
- Marinate the Chicken: In a bowl or zip-top bag, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, oregano, salt, and pepper. Add the chicken and toss to coat. Marinate in the refrigerator for at least 30 minutes (or up to 4 hours).
- Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken for 5–6 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes, then slice into strips.
- Assemble the Tacos: Warm the tortillas on the grill or in a skillet. Layer grilled chicken, lettuce, tomatoes, red onion, cheese, and cilantro in each tortilla. Serve with lime wedges.
