- 1/2 cup beef broth
- 1 cup shredded cheddar cheese

- Preheat oven: Preheat oven to 375°F and grease a 9×13-inch baking dish.
- Cook beef: In a skillet, cook ground beef, onion, and garlic until browned. Drain excess fat.
- Add ingredients: Stir in tomatoes, corn, black beans, mixed vegetables, spices, and cook until heated through.
- Prepare mashed potatoes: In a bowl, prepare mashed potatoes using beef broth. Spread beef mixture in baking dish, top with mashed potatoes and cheese.
