Ingredients
Scale
Peach Filling
- 4 cups fresh or frozen peaches (sliced)
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1/2 tsp ground cinnamon (optional)
Topping
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (melted)
- 1/2 cup milk
- 1 tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish to prevent sticking and ensure easy serving.
- Make the Peach Filling: In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, cornstarch, and ground cinnamon if using. Stir well until the mixture is evenly coated and set aside so the flavors meld.
- Prepare the Topping: In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Pour in the melted butter, milk, and vanilla extract, then stir gently until just combined to form a batter.
- Assemble the Cobbler: Pour the peach filling evenly into the prepared baking dish. Drop spoonfuls of the topping over the peach mixture and gently spread to cover most of the filling.
- Bake the Cobbler: Place the baking dish in the oven and bake for 35-40 minutes, or until the topping turns golden brown and the peach filling is bubbling around the edges.
- Cool and Serve: Allow the cobbler to cool for 10-15 minutes before serving. Enjoy warm, optionally topped with vanilla ice cream or whipped cream for added indulgence.
Notes
- Use fresh peaches in season for the best flavor, but frozen peaches work well too—just thaw and drain excess liquid before using.
- The cinnamon is optional but adds a lovely warm spice to the peach filling.
- For a crispier topping, sprinkle a little sugar on top before baking.
- Letting the cobbler rest before serving helps the filling thicken and makes it easier to scoop.
- This recipe can be doubled and baked in a larger dish for bigger gatherings.
