Description

These Strawberry Cheesecake Cookies are a delightful treat that combines the flavors of creamy cheesecake with the sweetness of strawberries in a chewy cookie form. Perfect for any dessert lover!

Ingredients

Scale

For the cookies:

  • 1 cup freeze-dried strawberries
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Additional ingredients:

  • 8 ounces cream cheese, cold and cut into small cubes
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Prepare the strawberry powder: Place the freeze-dried strawberries in a food processor and pulse into a fine powder.
  3. Cream butter and sugars: In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and strawberry powder.
  6. Mix the dough: Gradually add the dry ingredients to the wet ingredients and mix until just combined. Gently fold in the cream cheese cubes and white chocolate chips if using.
  7. Bake: Scoop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are set and the centers are slightly soft.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Keep the cream cheese cold when mixing to maintain creamy pockets inside the cookies.
  • For a stronger strawberry flavor, you can add a drop of strawberry extract.
  • Store cookies in an airtight container in the fridge for extra chewiness.
