Instructions

  1. Prepare the Cheesecake Filling: In a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth. Scoop into 1 tsp-sized dollops onto a parchment-lined tray and freeze for at least 30 minutes.
  2. Make the Cookie Dough: In a separate bowl, cream the butter and granulated sugar until light and fluffy. Add the egg and vanilla, mixing until combined. In another bowl, whisk the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, then fold in the crushed freeze-dried strawberries and white chocolate chips.
  3. Assemble the Cookies: Scoop about 1 1/2 tbsp of dough and flatten it slightly. Place a frozen cheesecake dollop in the center and wrap the dough around it to seal. Place on a lined baking sheet and chill for 10–15 minutes.
  4. Bake and Serve: Preheat the oven to 350°F. Bake the cookies for 12–14 minutes or until the edges are just golden. Let cool on the pan before serving.
