- 1 whole chicken (about 3–4 pounds)
- 10 cups water
- 2 large carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated (optional)
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley
- Juice of 1/2 lemon
Instructions
- Place the whole chicken in a large pot: Cover with water and bring to a boil.
- Simmer: Reduce heat, skim off foam, and add carrots, celery, onion, garlic, ginger, bay leaf, thyme, salt, and pepper. Simmer for 1.5 to 2 hours.
- Shred the chicken: Remove chicken, shred meat, discard bones and skin, then return shredded chicken to pot.
- Finish the soup: Stir in parsley and lemon juice. Adjust seasoning and serve hot, garnished with parsley.
