Tuna Salad

  • 2 (5oz) cans of tuna, drained
  • 1 medium onion, chopped
  • 1/2 stalk of celery, chopped
  • 1 garlic clove, minced
  • 1 tablespoon fresh parsley, chopped
  • 34 tablespoons mayonnaise
  • 2 tablespoons extra virgin olive oil (for tuna mixture)
  • 1/3 cup shredded mozzarella cheese
  • Salt and pepper, to taste

For Grilling

  • 3 tablespoons extra virgin olive oil (divided: 1 tbsp for cooking)
  • Bread, sliced (your choice)
  • Butter, softened (for spreading)

Instructions

  1. Prepare Tuna Salad: Drain the water from the tuna cans and place the tuna in a medium bowl. Add the chopped onion, celery, garlic, parsley, mayonnaise, 2 tablespoons of olive oil, and shredded mozzarella cheese. Mix all ingredients well until fully combined. Season with salt and pepper according to your taste.
  2. Heat Skillet and Prepare Bread: Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. While the skillet is heating, spread softened butter on one side of each slice of bread.
  3. Assemble and Toast Bottom Bread: Place the bread slices butter-side down in the heated skillet. Scoop about 2 tablespoons of the tuna salad mixture onto the bread in the skillet.
  4. Add Top Bread and Grill Sandwich: Butter another slice of bread on one side and place it butter-side up on top of the tuna salad. Cook until the bottom bread is golden brown, then carefully flip the sandwich to grill the other side until it is golden and crispy, about 2 to 3 minutes.
  5. Serve: Remove the sandwich from the skillet. Let it rest for a minute, then slice and serve hot for the best melted texture and flavor.
