Cookies:

  • 1 large egg yolk

Optional:

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream together the butter and sugar until light and fluffy. Mix in the egg yolk and vanilla extract.
  3. Add dry ingredients: Add the flour and salt, and mix until a soft dough forms.
  4. Shape and fill cookies: Roll the dough into 1-inch balls and place on the baking sheet. Press an indentation into each cookie and fill with jam.
  5. Bake: Bake for 12–14 minutes until lightly golden. Cool on a wire rack.
  6. Dust with sugar: Dust with powdered sugar if desired before serving.
