  • 2 large eggs

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup mini chocolate chips (optional)

For Filling:

  • 8 oz mascarpone cheese
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract

For Dusting:

  • unsweetened cocoa powder

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and flavorings: Add the eggs one at a time, mixing well after each. Stir in vanilla extract and espresso powder.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Mix dough: Gradually add the dry ingredients to the wet mixture until just combined. Fold in mini chocolate chips, if using.
  6. Bake: Scoop dough onto baking sheets and bake for 10–12 minutes.
  7. Make filling: Beat mascarpone, powdered sugar, and vanilla extract together until smooth.
