Description

Tomato and Pepper Bruschetta is a vibrant Italian appetizer featuring toasted baguette slices topped with a flavorful mixture of fresh tomatoes, red and yellow bell peppers, garlic, basil, and balsamic vinegar. This easy-to-make dish is perfect for summer gatherings and offers a fresh, colorful start to any meal.

Ingredients

Scale

Bread and Oil

  • 1 baguette, sliced into ½-inch pieces
  • 2 tablespoons olive oil (plus more for brushing bread)

Topping

  • 3 medium ripe tomatoes, diced
  • 1 red bell pepper, finely chopped
  • 1 yellow bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat and Toast Bread: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and lightly brush both sides with olive oil. Toast in the oven for 7–9 minutes, turning once halfway through, until golden and crisp.
  2. Prepare the Topping: In a medium bowl, combine the diced tomatoes, finely chopped red and yellow bell peppers, minced garlic, chopped basil, balsamic vinegar, 2 tablespoons olive oil, salt, and black pepper. Mix thoroughly and let sit for 10–15 minutes to allow the flavors to meld.
  3. Assemble Bruschetta: Just before serving, spoon the tomato and pepper mixture generously onto the toasted baguette slices. Optionally, garnish with extra fresh basil for added color and aroma.

Notes

  • For added richness, rub a cut garlic clove over the warm toasted bread before topping.
  • Sprinkle with grated Parmesan or crumbled feta cheese for a flavorful twist.
  • Use fresh, ripe tomatoes and peppers for the best taste and texture.
  • Serve immediately to prevent the bread from becoming soggy.
