For the Tomato Bisque:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 tablespoon tomato paste
- 1 can (28 ounces) crushed tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon sugar
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh basil or parsley for garnish
Instructions
- In a large pot over medium heat, melt the butter with the olive oil. Add the chopped onion and sauté for 5-6 minutes until softened.
- Stir in the minced garlic and cook for 1 minute more.
- Sprinkle in the flour and cook, stirring constantly, for 1-2 minutes to form a roux.
- Stir in the tomato paste, then add the crushed tomatoes and vegetable broth, whisking to combine.
- Add the sugar, dried basil, dried thyme, and season with salt and pepper.
- Bring the mixture to a boil, then reduce heat and simmer uncovered for 15-20 minutes, stirring occasionally.
- Use an immersion blender to blend the soup until smooth, or carefully blend in batches using a countertop blender.
- Return the soup to the pot if needed, then stir in the heavy cream and heat through without boiling.
- Taste and adjust seasoning if necessary.
- Ladle into bowls and garnish with chopped fresh basil or parsley.
Notes
- For a vegan version, use coconut cream instead of heavy cream.
- Serve with crusty bread or a grilled cheese sandwich for a comforting meal.
