Description

For the Tomato Bisque:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon sugar
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh basil or parsley for garnish

Instructions

  1. In a large pot over medium heat, melt the butter with the olive oil. Add the chopped onion and sauté for 5-6 minutes until softened.
  2. Stir in the minced garlic and cook for 1 minute more.
  3. Sprinkle in the flour and cook, stirring constantly, for 1-2 minutes to form a roux.
  4. Stir in the tomato paste, then add the crushed tomatoes and vegetable broth, whisking to combine.
  5. Add the sugar, dried basil, dried thyme, and season with salt and pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer uncovered for 15-20 minutes, stirring occasionally.
  7. Use an immersion blender to blend the soup until smooth, or carefully blend in batches using a countertop blender.
  8. Return the soup to the pot if needed, then stir in the heavy cream and heat through without boiling.
  9. Taste and adjust seasoning if necessary.
  10. Ladle into bowls and garnish with chopped fresh basil or parsley.

Notes

  • For a vegan version, use coconut cream instead of heavy cream.
  • Serve with crusty bread or a grilled cheese sandwich for a comforting meal.
