  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 cup heavy cream (optional)

Garnish:

  • Fresh basil leaves, chopped

Instructions

  1. Melt Butter: In a large pot, melt the butter with the olive oil over medium heat.
  2. Cook Onion: Add the chopped onion and cook until softened and translucent.
  3. Add Garlic: Stir in the minced garlic and cook until fragrant.
  4. Stir in Tomato Paste: Add the tomato paste and cook to deepen the flavor.
  5. Add Tomatoes and Broth: Include the canned tomatoes, vegetable broth, sugar, salt, pepper, and thyme. Simmer for 20-25 minutes.
  6. Puree Soup: Use an immersion blender to puree the soup until smooth. Stir in heavy cream if desired.
  7. Adjust Seasoning: Taste and adjust seasoning. Serve hot, garnished with fresh basil.
