Soup:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 carrot, sliced
- 2 celery stalks, sliced
- 1 (14.5 oz) can diced tomatoes
- 4 cups vegetable or chicken broth
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- Salt and pepper to taste

- 9 ounces refrigerated cheese tortellini
- 2 cups fresh spinach
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Heat olive oil: In a large pot over medium heat, add olive oil.
- Sauté vegetables: Add onion, carrot, and celery. Sauté until softened, about 5–7 minutes. Stir in garlic and cook for 1 minute.
- Add remaining ingredients: Stir in diced tomatoes, broth, basil, oregano, salt, and pepper. Bring to a boil, then simmer for 10 minutes.
- Cook tortellini: Add tortellini and cook according to package instructions, usually 5–7 minutes.
- Add spinach: Stir in spinach and cook until wilted.
- Adjust seasonings: Taste and adjust salt and pepper as needed.
