Soup:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, sliced
  • 2 celery stalks, sliced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • Salt and pepper to taste

Additions:

  • 9 ounces refrigerated cheese tortellini
  • 2 cups fresh spinach
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil: In a large pot over medium heat, add olive oil.
  2. Sauté vegetables: Add onion, carrot, and celery. Sauté until softened, about 5–7 minutes. Stir in garlic and cook for 1 minute.
  3. Add remaining ingredients: Stir in diced tomatoes, broth, basil, oregano, salt, and pepper. Bring to a boil, then simmer for 10 minutes.
  4. Cook tortellini: Add tortellini and cook according to package instructions, usually 5–7 minutes.
  5. Add spinach: Stir in spinach and cook until wilted.
  6. Adjust seasonings: Taste and adjust salt and pepper as needed.
  7. Serve: Serve hot, topped with grated Parmesan if desired.
