Instructions

- Combine ingredients and bring to boil: Add the brisket to the pot along with beef broth, enough water to cover the meat, bay leaves, crushed garlic cloves, and pickling spice. Bring the mixture to a gentle boil over medium-high heat.
- Simmer the brisket: Reduce the heat to low, cover the pot with a lid, and let it simmer gently for about 3 hours or until the brisket is tender and easily pierced with a fork.
- Add root vegetables: Add chopped carrots and potatoes to the pot, cover, and continue cooking for an additional 30 minutes until the vegetables are tender.
- Cook the cabbage: Stir in the cabbage wedges, cover, and steam for 15-20 minutes until the cabbage is bright green and crisp-tender, accessing the remaining heat and moisture in the pot.
- Serve: Remove the brisket and vegetables from the pot, slice the brisket against the grain, and serve hot with the cooked cabbage, potatoes, and carrots for a traditional Irish meal.
