Crust and Topping:

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour

Berry Filling:

  • 1 tablespoon cornstarch
  • 1 1/2 cups mixed berries (blueberries, raspberries, blackberries – fresh or frozen)
  • 1 tablespoon lemon juice
  • 2 tablespoons sugar (for topping)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a 9×13-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. Mix the crust: In a large bowl, mix the melted butter, granulated sugar, brown sugar, vanilla extract, salt, and baking powder until combined. Stir in the flour until a crumbly dough forms.
  3. Form the crust: Press two-thirds of the dough evenly into the bottom of the prepared pan to form the crust.
  4. Prepare the filling: In a separate bowl, toss the berries with cornstarch and lemon juice until coated. Spread the berry mixture evenly over the crust.
  5. Add topping and bake: Crumble the remaining dough over the top and sprinkle with 2 tablespoons of sugar. Bake for 40–45 minutes, or until golden brown and bubbly.
  6. Cool and serve: Let cool completely before slicing into bars. Enjoy!

Notes

  • If using frozen berries, do not thaw before mixing with cornstarch.
