Description

Indulge in the delightful blend of sweet, juicy berries and buttery crust with these Triple Berry Cobbler Bars. Perfect for summer gatherings or a cozy night in, these bars are bursting with the flavors of blueberries, raspberries, and blackberries.

Ingredients

Scale

Dough:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Berry Filling:

  • 2 cups mixed berries (such as blueberries, raspberries, and blackberries)
  • 2 teaspoons cornstarch
  • 2 tablespoons lemon juice
  • 1/4 cup granulated sugar (for berry mixture)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving an overhang.
  2. Cream the butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Mix the dry ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture to form a soft dough.
  4. Press the dough: Press two-thirds of the dough into the pan evenly.
  5. Prepare the berries: Toss the berries with cornstarch, lemon juice, and sugar. Spread the berry mixture over the crust.
  6. Add the topping: Crumble the remaining dough over the berries.
  7. Bake: Bake for 35–40 minutes until golden and bubbly.
  8. Cool and slice: Cool completely before slicing into bars.

Notes

  • You can use fresh or frozen berries—no need to thaw frozen berries.
  • For best flavor, chill the bars before serving. Pair with a scoop of vanilla ice cream for a delightful treat.
