Ingredients

Scale

For the Chicken:

  • 1 ½ pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • Salt and pepper to taste

For the Sauce:

  • 1 medium onion, chopped
  • 1 red bell pepper, sliced
  • 1 cup diced fresh pineapple
  • 1/2 cup pineapple juice
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 teaspoons cornstarch mixed with 2 tablespoons water

For Serving:

  • 3 cups cooked jasmine rice
  • 2 tablespoons chopped green onions
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, garlic powder, and ginger. Cook until golden brown and cooked through, about 6-8 minutes. Set aside.
  2. Prepare the Sauce: In the same skillet, sauté onion and bell pepper until softened. Add pineapple and cook for 2 minutes. Whisk together pineapple juice, soy sauce, and honey in a bowl. Pour into the skillet and simmer. Stir in cornstarch slurry and cook until thickened, about 2 minutes.
  3. Combine Everything: Return chicken to the skillet, coat in the sauce, and simmer for 2-3 minutes. Serve over warm jasmine rice, garnished with green onions and sesame seeds.

Notes

  • Marinate chicken in pineapple juice and soy sauce for added flavor.
  • Canned pineapple chunks can be used as a substitute for fresh.
  • Adjust sweetness by varying the amount of honey to suit your taste.
