Tuna and Artichoke Salad Ingredients:

  • 2 cans (5 oz each) tuna packed in olive oil, drained and flaked
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 2 tbsp capers, rinsed
  • 3 cups mixed salad greens
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
