- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
Soup Base:
- 8 cups low-sodium chicken or turkey broth
- 2 cups cooked turkey, shredded or chopped
- 1 cup egg noodles or pasta of choice
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon black pepper
- Salt to taste
- Juice of 1/2 lemon (optional)
- Fresh parsley for garnish
Instructions
- Sauté Vegetables: Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened. Add garlic and cook briefly.
- Add Broth and Ingredients: Pour in broth and bring to a boil. Stir in turkey, noodles, thyme, parsley, pepper, and salt.
- Simmer: Reduce heat and simmer for 10–12 minutes until noodles are tender.
- Finish and Serve: Stir in lemon juice if using. Adjust seasoning, garnish with parsley, and serve hot.
Notes
- This soup is a great way to use up leftover turkey.
- You can substitute rice or barley for noodles if preferred.
- To make it lower carb, skip the pasta and add more vegetables.
