- 1 pound lean ground turkey

- 1 large sweet potato, peeled and diced
- 1 red bell pepper, diced
- 1 can (15 ounces) diced tomatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 2 cups low-sodium chicken broth
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Heat the olive oil: In a large pot over medium heat, add the olive oil. Sauté the onion until softened, then add the garlic and cook for another minute.
- Cook the turkey: Add the ground turkey to the pot and cook until browned, breaking it up with a spoon.
- Add the vegetables and beans: Stir in the sweet potato and bell pepper, then add the diced tomatoes, black beans, kidney beans, chicken broth, tomato paste, and spices.
- Simmer: Bring the mixture to a boil, then reduce heat, cover, and simmer for 25-30 minutes until sweet potatoes are tender.
- Adjust seasonings: Taste the chili and adjust salt, pepper, and spices as needed.
- Serve: Garnish with fresh cilantro and serve hot.
