  • 1 pound lean ground turkey
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 large sweet potato, peeled and diced
  • 1 red bell pepper, diced
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat the olive oil: In a large pot over medium heat, add the olive oil. Sauté the onion until softened, then add the garlic and cook for another minute.
  2. Cook the turkey: Add the ground turkey to the pot and cook until browned, breaking it up with a spoon.
  3. Add the vegetables and beans: Stir in the sweet potato and bell pepper, then add the diced tomatoes, black beans, kidney beans, chicken broth, tomato paste, and spices.
  4. Simmer: Bring the mixture to a boil, then reduce heat, cover, and simmer for 25-30 minutes until sweet potatoes are tender.
  5. Adjust seasonings: Taste the chili and adjust salt, pepper, and spices as needed.
