For the Marinade:

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into 1 1/2-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons plain yogurt
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • Metal or soaked wooden skewers

Instructions

  1. Mix the Marinade: In a large bowl, whisk together olive oil, yogurt, turmeric, cumin, paprika, coriander, garlic, lemon juice, salt, and pepper until smooth.
  2. Marinate the Chicken: Add chicken pieces to the marinade, toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably 4–6 hours.
  3. Preheat the Grill: Preheat grill or grill pan over medium-high heat.
  4. Skewer the Chicken: Thread marinated chicken onto skewers with space between pieces.
  5. Grill the Kebabs: Grill for 10–12 minutes, turning occasionally until cooked through and slightly charred.
  6. Serve: Serve hot with rice, flatbread, or a side salad.

Notes

  • For extra flavor, add a pinch of chili flakes to the marinade.
  • You can also cook these kebabs under a broiler or in a cast-iron skillet if a grill isn’t available.
