  • 6 cups vegetable broth
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 3/4 cup orzo pasta
  • 4 cups fresh baby spinach
  • juice of 1/2 lemon
  • salt and pepper to taste

For Garnish:

  • fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil: In a large pot over medium heat, heat olive oil. Add diced onion and cook until translucent.
  2. Add spices: Stir in garlic, turmeric, cumin, and red pepper flakes; cook until fragrant.
  3. Simmer: Pour in vegetable broth, bring to a boil. Add chickpeas and orzo, simmer until orzo is tender.
  4. Add spinach: Stir in spinach and cook until wilted.
  5. Season and serve: Add lemon juice, salt, and pepper. Ladle into bowls, garnish with parsley if desired, and serve warm.
