Twice-Baked Potatoes are a delicious and indulgent side dish that’s perfect for any meal. Crispy potato skins are filled with a creamy, cheesy, and flavorful mashed potato mixture, then baked until golden and bubbly.

- 4 large russet potatoes
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup sour cream
- 1/4 cup whole milk
Additional Ingredients:
- 1 cup shredded cheddar cheese (divided)
- 4 slices cooked bacon (crumbled)
- 2 green onions (thinly sliced)
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Bake the potatoes: Scrub the potatoes clean, rub with olive oil, and bake for 50–60 minutes until tender. Let cool, then scoop out the flesh.
- Prepare the filling: Mash the potato flesh with butter, sour cream, and milk. Stir in half of the cheese, bacon, green onions, salt, and pepper.
- Fill the potatoes: Spoon the filling into the potato shells, top with remaining cheese, and bake for 15–20 minutes.
- Serve: Serve hot and enjoy!
Notes
- For a vegetarian version, omit the bacon and add sautéed mushrooms or extra green onions.
- You can make these ahead and reheat just before serving.
