Description

  • 4 large flour tortillas (burrito size)
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 small red onion, sliced
  • 1 zucchini, sliced

  • 1 cup cooked black beans
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar or Mexican blend cheese (or plant-based alternative)
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream or vegan yogurt
  • 1/4 cup guacamole
  • 1/2 tsp chili powder
  • 1/2 tsp cumin

Instructions
