  • 1 can (15 ounces) black beans, rinsed and drained

  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 large eggs, lightly beaten
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)

  • 4 burger buns
  • Lettuce leaves

Instructions

  1. Mash the Beans: In a large bowl, mash the black beans with a fork, leaving some chunks for texture.
  2. Mix Ingredients: Add wild rice, red onion, carrot, parsley, garlic, breadcrumbs, Parmesan, eggs, soy sauce, paprika, salt, and pepper. Mix until combined.
  3. Shape Patties: Divide mixture into 4 portions and shape into patties.
  4. Cook Patties: Cook patties in olive oil for 4-5 minutes per side until golden brown.
