- 1/2 cup finely diced red onion
- 1/2 cup grated carrot
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs (use gluten-free if needed)
- 1/4 cup grated Parmesan cheese (optional)
- 2 large eggs, lightly beaten
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for cooking)

- 4 burger buns
- Lettuce leaves

Instructions
- Mash the Beans: In a large bowl, mash the black beans with a fork, leaving some chunks for texture.
- Mix Ingredients: Add wild rice, red onion, carrot, parsley, garlic, breadcrumbs, Parmesan, eggs, soy sauce, paprika, salt, and pepper. Mix until combined.
- Shape Patties: Divide mixture into 4 portions and shape into patties.
- Cook Patties: Cook patties in olive oil for 4-5 minutes per side until golden brown.
- Assemble Burgers: Toast buns, then assemble with lettuce, patty, tomato, onion, and sauce. Serve hot.
Notes
- These patties freeze well — freeze uncooked patties on a baking sheet, then transfer to a bag once solid. Cook from frozen, adding a few extra minutes.
