  • 1/2 cup unsweetened plant milk
  • 1 tablespoon lemon juice
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Lasagna Roll-Ups:

  • 8 lasagna noodles
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 5 ounces fresh spinach, roughly chopped
  • 2 cups marinara sauce
  • 1/2 teaspoon dried oregano
  • Fresh basil for garnish

Instructions

  1. Cook the Lasagna Noodles: Cook noodles until al dente, drain, and set aside.
  2. Prepare the Filling: Sauté garlic and spinach, then blend cashews, plant milk, lemon juice, yeast, salt, and pepper. Combine with cooked spinach.
